Chef Carlos is a Las Vegas restaurant with homemade feel, rotating offerings included creamy corn and cheesy potato—hearty and warming in the way good soups should be.
If you’re looking a little lighter, the grilled chicken and strawberry salad wholeheartedly delivers; seasoned walnuts, blue cheese and an outstanding housemade balsamic vinegar/olive-oil dressing make for a surprisingly healthy meal in a decidedly unhealthy setting.
Las Vegas locals frequent Carlos' inside Charlie’s Saloon on South Durango. A 34-year veteran chef who has worked at major hotels including Bally’s and Paris Las Vegas on the Strip, Fernandez said his wife and two daughters were “very supportive” of his pursuit of every chef’s dream to open his own restaurant.
“It’s one of those things that I wanted to do,” said Fernandez, who was born in Mexico. “I love to cook, and I love to make people happy.”
